Food practices in the Real Colégio de São Paulo of Coimbra: the “Book of bread” from 1707-08

The surviving documental collection of the Colégio de São Paulo in Coimbra, today kept in the Archive of the University of Coimbra, contains a series of manuscripts entitled “Livros de despesa do pão” (Bread expenditure books), where daily bread consumption is recorded. One of the manuscripts presents a detailed record of this expenditure made between November 1707 and October 1708, and whose analysis allows us to know in detail some of the eating habits of colegiais (fellows), giving an important perspective of the importance of bread in the modern Portuguese food universe and its multiple uses in the culinary context.
