Culinary trends in the daily menus from Empreza Culinária (Lisbon, 1898-1899)

In 1896 the Empreza Culinária publish an advertise in Annuario Commercial. Headquartered in Lisbon, provided a specialized service of dinners delivered at home, with a menu constituted by several dishes and weekly published in the Diário de Notícias after 1898.
The present study intents to analysis the set of menus published in the first year of this editorial option (between March 1898 and March 1899), through which it is intended to understand how, at a culinary level, a food production unit of this typology, oriented towards an urban consumer universe, structured their food offer.
How many dishes formed the menus offered; what types of food were served; what were the sources of inspiration and which socio-culinary models it intended to replicate with these typology of meals are some of the issues addressed in this exploratory analysis of a commercial activity of unusual contours for the period and space.
